Resumen : We studied beans consumption rates in Durango, Mexico and the region of Comarca Lagunera. N=1908, stratified by income and school levels, income of 1-3, 4-6, 7-10 and more than 10 minimum wage, with a confidence level of 95 percent and an error of 20 percent. Consumption rate in Durango is lower (α=0,05 %) to that of Comarca Lagunera, 14.56 and 18.58 kg year-1 respectively. Income levels conform 3 subpopulations (α=0,05 %), highest income consumed 12,61 and 14,11 in Durango and Comarca Lagunera respectively; income of 6-10 and 3-6 wages consumed 15.55 and 17.56 kg year-1 in Durango compared to 18.20 and 21.10 kg year-1 in Comarca Lagunera; and lastly, lowest income, consumed 20,56 and 22,95 kg year-1 in Durangogo and Comarca Lagunera respectively. Behavior is similar by schooling, bachelors consume 14.85 and 15.43 kg year-1 in Durangogo and Comarca Lagunera resp); High School and Junior High consumed 15.04 and 17.54 kg year-1 in Durango compared to 15.86 and 19.91 kg year-1 for the Comarca Lagunera; lowest schooling consumed 18,42 and 25,12 kg year-1 in Durango and Comarca Lagunera. 32,84 por ciento prefer bulk cooked beans limiting to shelf life; canned beans or “refrito” represents a potential market of 15 percent; 55.07 percent do not pre-soak beans, conducing to greater flatulency and cooking power consumption; 47.30 percent acquire beans byflavor, 28.85 percent by price and 23.82 percent by preparation style; In Durango 38.12 percent prefer Flor de Mayo variety, as compared to Comarca Lagunera 54.23 percent prefer Pinto beans; 41.65 percent acquire beans in supermarkets, 39.21in convenience stores and tortilla factories. Real potential market is nutritious snacks 89 percent, presenting an attractive market, to replace junk foods, increasing considerably the value added of beans.
